
I have been planning of making this kutchinta for such a long time. It's one of my favorite kakanin or snack back in the Philippines. I have seen a box of kutchinta (ready mix) in asian store, but I know nothing can beat a freshly made kutchinta. Last weekend, I finally had the guts to try making kutchinta on my own. I was really nervous for it was my first time.
I even grated my very own fresh coconut to go along with my kutchinta. After a long anticipation, I finally had the first taste of my kutchinta... This kutchinta tasted absolutely, delicious! It was PERFECT! I cannot believe it myself. I just did it! I made it for the first time and it came out divine! Top it with freshly grated coconut and it was heaven! ![]()

I am so happy that this kutchinta was a big success! I can finally make kutchinta on my own and I feel proud about that. Never in my entire life did I think, that I will be cooking kutchinta... haha! I love it so much that I ate all of them
... that's how good it was!
I will be making this again anytime, soon. The kutchinta is going to be judge by my dear friends. I hope they will like it, as much as I do (which I think, they will!). Yahhooo!

I made this yummy hot pandesal the other day and it came out super, good! I did make it again last saturday for a gathering and my friends go crazy with this. My house smells like bakery everytime I made some hot pandesal. Nothing beats than a fresh hot pandesal! It is soft, but not super duper soft, compare to the one back home. But, I am still proud! I had tried several pandesal recipe before and they are as hard as rock, the day after! LOL!
I am getting closer on achieving that perfect pandesal (for me, anyway). Next time, I will let it rise for at least 6 hrs and see if it will be super duper soft. If you are interested of making your own pandesal, here's the recipe. If you got any questions, pls feel free to ask.
Pandesal Recipe
Ingredients:
2 tablespoon shortening
1 cup warm water
5 tablespoon sugar
2 small sachet yeast
1 tablespoon salt
4 and 1/2 cups bread flour
1 cup boiling water
plain bread crumbs
cheesecloth
Directions:
1. Combine bread flour, shortening, sugar, salt and boiling water in a large mixing bowl (if you got KitchenAid mixer, the better).
2. Mix 1 cup warm water and the dry yeast. Stir until well blended. Let stand for 5 minutes or until bubbly.
3. Add the water-yeast mixture to the mixing bowl. Knead until dough is form but still little bit sticky (5-7 minutes using KitchenAid mixer).
4. Cover with cheesecloth and let rise in warm place until double in size (I put mine inside the oven, just make sure your oven is turn-off) for at least 40 mins.
5. Punch down dough to release air and turn out on a lightly floured surface. Roll the dough into a long log (just like making embutido). Cut and divide dough into 24 equal parts and shape into ovals.
6. Roll in bread crumbs. Place on greased cookie sheets. Cover with cheesecloth, let rise in warm place (inside the oven) for another 40 minutes to an hour.
7. Bake at 375°F for 15 to 17 minutes or until golden brown.

I haven't sleep last night at all. My son got sick and hearing my father inlaw's death was even worst. We cannot believe it and we are still in denial. I feel really sorry for my husband for he loved his dad, very much. I always prayed that Lord God will give him more years, so he could spend more time with his kids and grandkids. Unfortunately, he passed away right before he could see his youngest grandchild. We are all hurt and mourning.....
It is very hard to loss a loved one during the holidays. We are all saddened by this news. The whole family are going to Illinois either tomorrow or friday, I am not sure yet. Road trip with sick kids aren't gonna be easy, but we need to be there. Please pray for our dad's soul and for us to have a safe trip to Illinois.

I made this Ham and Navy Bean-Soup for hubby's birthday and it was a hit! It taste absolutely, delicious. Yesss, I am bragging about it! LOL! I wouldn't anyway, if its not that wonderful. It taste even better with honey cornbread. My boys who are picky eaters, just dig into it!
The leftover on the next day was even better. My, oh my, this is by far the best ham and bean soup, I have ever made. Hubby gave this a thumbs-up! Which made me happy! ![]()

Went to my favorite shopping store last weekend and saw this super cute "Worthington- Bentley Pump" in Leopard print. I absolutely, loveeeeeeeeeeeee this shoes! The priced and quality is unbelieveable. How I wish they come in bright colors, too. Super, duper, comfortable to wear! The first time I put on this shoes, I can already tell how comfortable it is. I can definitely, wear this sexy shoes all day long. Reserve this for christmas party! yahooo!
I wanted to buy another pair, but I am not fan of the other colors. How I wish they come in fuschia pink, red, bright yellow, etc. Btw, I got this really cheap, too! I am very, very happy with my purchased!

I am making homemade pizza tonight! Well, I always do. I will try using fresh basil, fresh ricotta and tomatoes for toppings this time. I usually go with mushrooms, onions and ham pizza. Anyways, I cannot wait! Of course, my kids prefer cheese pizza only. I will let them do their own toppings to keep them entertain. They enjoy making their own pizza. Hubby is bringing home some good wings. My favorite meal, pizza and wings! Thinking about it makes me feel very hungry. My dough is still rising and won't be ready in an hour or so. Just perfect for dinner time!

I love to play around with my hair when I have lots of time. Creating soft curls is my favorite thing to do. But, with small kids for the meantime, curling my hair is impossible. As well all know, curling hair takes plenty of time, too.
Anyways, I am thinking of visiting my favorite salon and have my hair semi-perm. I have a friend who always had her hair semi-perm and its beautiful! Best thing about it? It's not forever curls. My hair looks so boring right now.
It's very thin and no flaws at all. I wanted to have a soft curls for a change. Semi-perm sounds good to me. I heard its good for like 6 months. I have to search and read more about it before doing do. I want to make sure that it is safe and won't ruin my hair much more! But yessssssssssss, I am excited to see myself with soft curls for at least months! Yayy!

Happy Columbus Day! Hope you guys had fun shopping today, hehe. As for me, spent the entire weekend with my loved ones. Went to pumpkin patch yesterday and did more painting on the wall today. We painted the boys room and we are half way there. I love the blue and orange combo. I picked 3 colors for their bedrooms, blue, orange and green. It feels good to know that we are starting to accomplish small things in this house. Next project, paint the master's bedroom.
Anyways, my weekend was really awesome. My sweet mother inlaw came over to visit us. My boys enjoy every moment they have their grandma beside them. They just love her so much! It was nice to see her again. Last time I saw her was when I gave birth to my youngest child, which was January. I am very lucky to have an easy going and loving mother inlaw! Love her so much.

equals....... happy me! Finally, I was able to pig out some food that I really craved. I've been wanting to eat some smoke fish for a long time now. All of the moving process, mess me up. I can't remember the last time I had smoke fish or better know in the Philippines as "Buwad". My dinner was delish! Paired with white rice and chilli-vinegar sauce. It was heaven!
Now relaxing and doing some blogging. It is such a great day for me. I was able to do some house chores, too. Tomorrow is another busy day waiting for me. I need to make my grocery list for friday. Yes, I am a super woman and it is not easy to be one! Hope you guys are having a fabulous night as well. Thanks to all who drop by and made some time to read my entries. Love you all....
